MACKEREL PRESERVES: MACKEREL FILLETS IN OLIVE OIL, MACKEREL EGGS, MACKEREL LATUMME

The Mackerel can be prepared in many ways and we at Drago Conserve have decided to propose it as we know how to do, that is, with a hand craft and using raw materials of the highest quality. Fillets of Mackerel in olive oil or natural are cooked in water and salt, so as to maintain unaltered the organoleptic properties of the product and its nutritional values. Another typical dish of traditional Sicilian cuisine is the Mackerel Lattume. As with tuna bottarga, is a product of the highest gastronomy, ideal for accompanying salads or first courses. Mackerel Eggs, on the other hand, are a real explosion of taste and are highly recommended for special preparations with which to amaze your guests.

Unique dishes of the Sicilian tradition
Tuna is cooked in water and salt, not with steam, in order to keep the organoleptic qualities intact and do not disperse the majority of the protein. After cooking, the product is cooled and skinning manually and the operators remove also the fishbones. The clean slices are then cut into threads and placed in glass and jars of different sizes.
